Hybrid Washed


Washed processes are characterized by the delicacy and elegance of flavor added to the coffee. Once the coffee cherries are harvested and arrive at the processing area, they are pulped, removing the husk and mucilage. Drying process is done in the almonds. However, our partner “Café Granja La Esperanza” has taken this process to a higher level by fermenting for hours before drying, which is why this process is called hybrid washed.

Process

Honey


Honey processes are characterized by their sweetness in taste, offering a cup with more complex flavors. Once the coffee cherries are harvested and arrive at the processing area, they are pulped by removing only the peel. The drying process takes place in almonds covered by mucilage, generating a texture similar to honey.

Process

Natural Anaerobic


Natural processes are characterized by offering a sweet and fruity cup. Once the coffee cherries are harvested and reach the processing area, they are dried without pulping. Our ally, Café Granja La Esperanza, has developed an anaerobic fermentation process (utilizing sealed tank) before drying the cherries, allowing for a sweeter flavor.
