However, in our constant search for innovation and exploration of flavors, we designed a process in which the coffee is fermented for several hours after being washed and before being dried. The combination of care from the field and our delicate roasting results in a Galactic profile.






The natural process is characterized by offering a sweet and fruity cup. Once the coffee cherries are harvested and arrive to the processing area they are dried without pulping. Our partner Café Granja La Esperanza, has developed an anaerobic fermentation process (sealed tank) before taking the cherries to the drying process, allowing for sweet and fruity flavors.

Our Enigmas profiles are characterized for being coffees with SCAA +90 scores, recognized worldwide for being competitive coffees.

MAGNITUDE
Enigma Café strives to be avant-garde in its products. That is why, together with our ally, Café Granja La Esperaza, we strive to obtain a profile with more complex notes and we take a risk with the process known as Honey, which naturally brings greater sweetness to the coffee. We also have developed a roast that highlights the innate flavors of coffee in this process.
